The Bikini Cocktail
Serves 10 people
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Place the listed items in a pan, bring to a gentle boil, stirring so the sugar melts. Then, turn off the stove and leave to cool fully. Transfer into a clean bottle, seal keeping it in the refrigerator, where it will keep for about four weeks.
Preparing the Premix: Pour all the liquid ingredients into a big jug, let it rest for one hour, then filter it best through a fine cloth, to ensure it's fully clarified.
When ready to serve: Add 85ml from the premix into a stirring glass filled with ice, and stir gently for a minute to cool it down. Filter into a cold coupe glass or equivalent, decorate with the cranberries and finish by giving it a quick spritz of the essential oil over the drink.
